Michi Michi in Bankers Hill: Pan Dulce, Seasonal Coffee and My Croissant Obsession

By Giselle Lelux

Tijuana pan dulce, seasonal coffee and a cheese and jalapeño croissant I’m obsessed with. If you saw my latest video, this is Michi Michi in Bankers Hill, the San Diego baking collective behind that pastry spread.

The pan de muerto deserves its moment, but there’s more to this spot than a holiday order. Here’s the story behind the bakery, the chef currently in residence and what to know before you go.

A woman-owned baking collective, not just one pastry counter

Founded by Vanessa Corrales, Michi Michi gives different bakers a place to share their work. Its collective model brings together local baking talent and farm partners, so the people behind the pastries are part of the reason to visit.

That rotating approach also means a photo is a snapshot, not a promise that the exact same pastry will be in the case every week.

Meet the Tijuana chef in residence

For October through December 2026, Michi Michi’s chef in residence is Alejandra Carpio, a pastry chef based in Tijuana and the creator of LÚA. Her work brings French bread and laminated-pastry techniques together with her Mexican and border identity.

It’s a lovely connection between two food cities that are already so much a part of life here. You don’t have to cross the border to find her work during this residency.

The cheese and jalapeño croissant has my attention

My personal favorite to call out? The cheese and jalapeño croissant. I’m obsessed. If you lean savory at a bakery, that’s the one I’d ask about before choosing something sweet.

They also have seasonal coffees, so take a look at the drinks menu while you’re there. I’m keeping this recommendation seasonal rather than naming a drink that may rotate off the menu.

A look at the 2026 pan de muerto collection

The 2026 seasonal pan de muerto collection by Alejandra included traditional sugar, milk chocolate and peanut, dark chocolate and hazelnut, vanilla bean and nata, plus orange spice and sesame. It gives you a sense of the range behind the pastries in my photos.

Seasonal availability note: The special five-piece preorder box was marked sold out when checked on November 1, 2026. Its pickup dates were October 31 and November 1. This is a look at that seasonal collection, not an active preorder announcement. Check the bakery’s current offerings before going for a specific flavor.

And if this has you thinking about a breakfast trip across the border, here’s my Café de la Flor breakfast in Tijuana guide to save next.
