A bowl of noodles, vegetables, seafood and your choice of broth, built exactly how you want it. If you saw my November 4 reel, this is Zhang Liang Malatang on Clairemont Mesa Boulevard. It’s a San Diego spot to save for a customizable hot bowl with friends.

How to build your bowl

Grab a bowl and tongs, then work your way through the ingredient bar. My reel highlights thinly sliced beef and lamb, shrimp, fish balls, tofu, mushrooms, leafy greens and noodles. Choose the mix you actually want to eat, because the ingredients are weighed at the counter.

Next, choose your soup base and spice level. The kitchen cooks the ingredients for you and brings the finished bowl to your table. The brand’s official ordering guide follows the same choose-your-ingredients, choose-your-base format, with a sauce station for the finishing touches.

What does $13.99 per pound mean?

The ingredient price featured in my November 4, 2026 reel is $13.99 per pound. That is a price by weight, rather than a flat price for any size bowl. A one-pound ingredient portion would be $13.99 before tax and any separately charged extras.

Check the posted menu before filling your bowl and ask about minimum weights, broth charges or other extras. Prices can change, and the amount you choose will determine the ingredient total. If you want to keep the meal within a budget, it helps to choose deliberately instead of adding one of everything.

Soup, spice and a sauce bar

The reel features classic bone broth, a spicy mala option and a dry version for anyone who would rather skip the soup. Zhangliang’s national menu also shows tomato and mushroom broths, dry mala mix and wok-fried mala xiangguo. Ask which bases are available at the Clairemont location that day rather than assuming every option on the national site is offered.

Then there’s the self-serve sauce bar. Chili oil, garlic, sesame and other seasonings let you adjust the flavor to suit your bowl. Start with a little if you’re unsure how much heat you want. For allergies or dietary requirements, ask the staff about the ingredients, broth and shared preparation before ordering.
